Keto Quiche Egg and Bacon Recipe is a quick breakfast, lunch or dinner. This easy to cook is a staple on the ketogenic diet. High in fats and very low in carbs it with tick all your boxes. You can even freeze this one up for work., as it reheats well. Suits LCHF diet, Ketogenic diet or Atkins diet.
1, Preheat the oven to 180 Degrees
Prep time will take around 15 minutes
Bake for 25-30 minutes depending on your oven.
For the crust:
In a bowl place the almond meal, Parmesan cheese, and salt n pepper. Mix this together thoroughly then add the egg and mix, you may have to combine this with your hands until it makes a dough.
Once the dough is mixed place into your tin and press it down around the shell.
You can blind bake this for 12-15 minutes before placing any filling in. Personally, I prefer to just cook it as is, with the filling I like the taste of the crust better this way but you can try both ways and decide for yourself
Preparing the filling:
In a frying pan cook your onion and Bacon. While that is cooking mix your eggs, cream and salt and pepper in a bowl and whisk together.
Once the bacon and onion are cooked scatter half of this into the base of your quiche, then sprinkle in half of the cheese and add some of your egg mixtures, then continue layering the ingredients.
Once this is done you can either slice your cherry tomatoes or place them around and keep them whole.
Cook in your oven for 25 to 30 mins.
These freeze well so you can use the leftovers for work lunches
